31 Days of Pumpkin: Day 9
Some nights dinner and dessert are one and the same. Isn’t that what breakfast has been pulling off for years anyway? At least these latkes have wholesome pumpkin and apple, and no added sugar. Peel, grate, mix, fry, eat.
Pumpkin Apple Latkes
2 c shredded pumpkin
2 shredded apples (no skins or cores)
1/4 c coconut flour
2 tsp total pumpkin pie spices:cinnamon, nutmeg, ginger, cloves
dash of salt
1 tsp thyme
1 tsp ground sage
1/2 tsp salt
(more coconut oil for frying)
Combine all the ingredients. Heat oil (1/2″) in a frying pan over a medium-low flame. Form a pancake and flatten as much as you can. Cook until golden on one side, then flip and cook the other side until golden. Drain on a paper towel. Serve warm.
Maple syrup (Harry’s choice)
Sour cream and 2 chopped prunes per person heated in 2 tbsp bourbon and a pinch of brown sugar (Me)
Mascarpone and dried cranberries
Cilantro sauce: 1/2 c cilantro, a clove of garlic, 1 tbsp fish sauce, juice of 1 lime and 1/4 c lowfat mayo in a food processor.
Serve over a salad
